This Friday, we will be joined by The Oink Joint food truck! Oink Johnson’s Southern Barbeque provides takeout of fresh barbecue using the finest ingredients available. They’re cooking up St. Louis-style ribs, baby back ribs, pulled pork and brisket, smoked chicken, and delectable southern sides. And we’re providing the best wine options for your BBQ feast!
First Pairing:
St. Louis-Style Ribs

Mainline Maple Marquette OR Overworked Dry Riesling
The St. Louis-style ribs aren’t the typical baby back ribs you may be familiar with. These are cut from the belly of the hog, and contain a higher amount of fat and therefore, FLAVOR. We suggest a bold red wine, such as our Mainline Maple Marquette. This wine is medium bodied and aged in maple whiskey barrels. It provides a smooth, bold flavor and smokey aroma. The tannins in the wine are balanced out by the fattiness of the meat, creating a perfect equilibrium of deliciousness in your mouth. The smokey aroma of this wine will match well with the smoke of the meat. Looking for a lighter experience? Try our Overworked Dry Riesling! This is an ideal palate-cleanser after noshing on these smokey, succulent ribs.

Beef Brisket

Initiative Marquette OR ODA Shiraz
Our next pairing is a barbecue staple, where beefy and smokey, come together to form a southern flavor party with each bite. By itself or on a roll, beef brisket is a great choice to satisfy that barbecue craving. Pair it with our Initiative Marquette, which contains light tannins to balance out the fattiness of the meat. The pepper and tobacco notes in this wine will enhance the smoke and spice flavor profiles within the meat. Another wine that will pair nicely with this dish is our ODA Shiraz. Full-bodied and slightly sweet, this Shiraz will enhance the peppery flavors of the beef.
